Today I went to a local market and bought a 2 kilo box of cherries, and it only cost 3 euros !
We washed and ate quite a few, but it left me wondering what recipes I could try using fresh cherries.
I found this Cherry muffin one which stems from America, which is great for today given its the 4th of July !
For approx. 16 muffins you will need:- 6 oz Plain Flour
1 & 1/2 teaspoons baking powder
1/4 teaspoon salt
4 oz sugar
1 egg
1 teaspoon vanilla essence
1/4 teaspoon almond essence
4 oz fresh cherries(pitted)
4 oz butter
8 fl oz buttermilk.
**Please note, I have often seen buttermilk in American recipes and a quick substitute for the real thing is , measure out your milk and substitute 1 tablespoon of the milk for 1 tablespoon of lemon juice or white vinegar then leave for 5 minutes, it works great!**
1/ First preheat oven to 350 F
2/ Into a bowl mix the flour, baking powder and salt.
3/Line a muffin tin with paper cases, this makes approx.16
4/In a large bowl, cream together butter and sugar until light.
5/ Blend in the egg, vanilla extract and almond extract until smooth.
6/Working in two or three additions, gradually mix in the dry ingredients, alternating with additions of buttermilk and ending with an addition of the last of the flour mixture.
7/ Stir in chopped cherries.
8/Bake for 16-19 minutes, until a toothpick inserted into the center comes out clean.9/ Cool cupcakes on a wire rack completely before frosting.(optional)
When they are cooked, you will notice they shrink slightly so make sure you fill the paper cases,they taste lovely without the frosting but if you want to swirl some buttercream on top,add a washed cherry with stalk on and dust lightly with icing sugar for a perfect tea time treat !
only another kilo left of cherries to eat !!
I should have said, chop the cherries once pitted :)
